I haven’t been a vegetarian for a very long time (about 6 months) and I felt like I was in a bit of a rut with recipe ideas. So when I saw Meatless All Day on Netgalley I had to grab it! And I was not disappointed. I was however, disappointed that I can’t get all the ingredients in my country (South Africa), but that is hardly the author’s fault.
There were A LOT of recipes I wanted to try right away. Among them were: Black Bean Burgers with Grilled Mango-Lime Mayonnaise, Frittata with Broccoli, Smoke Mozzarella and Roasted Red Peppers, Zucchini Fritters etc.
My first and favorite recipe however, was the Mexican Pinto Bean Burgers with Fresh Guacamole and Corn Pico de Gallo. I don’t want to give away too much of the recipe, but I did take some pictures of the process:
It was delicious and no matter what, I will not eat any homemade burger without the Guacamole and Corn Pico de Gallo again!
I would say if you love ‘meatless’ dishes then definitely try this cookbook! Just note that if you are like me and like some simple recipes and can’t find a lot ingredients in your country that you will have to improvise!
This got a 7/10 from me.
